Taco Fish La Paz

A Guadalajara classic: every self-respecting local has been to Taco Fish La Paz. As the name suggests, they serve fish tacos, and not just any fish tacos, but the best in the city. The most popular order is the traditional battered fish taco, though the marlin and battered shrimp tacos are just as good. Looking for something different? Try the taco choyero, made with shrimp, marlin, bacon and cheese. It is a winning combination. They also serve seafood burritos, empanadas, quesadillas and ceviche tostadas.
Address: Avenida, Av. de la Paz 494, Mexicaltzingo, 44100 Guadalajara, Jal.

Tacos al Vapor Oscar

Guadalajara’s version of tacos de canasta (steamed “basket” tacos), kept warm in a pot instead of a basket, and some of the best in the city. This stand sets up in the mornings and is a great way to fuel up on what locals jokingly call vitamin “T.” Fillings include carnaza (beef), carnaza adobada (beef in adobo), mushroom with cheese, chicharrón (pork rinds), beans, potato and beef in mole. On Saturdays they also have shrimp with cheese and shrimp a la diabla (in spicy red sauce).
Address: Calle Aguamarina 1985, La Giralda, 45088 Zapopan, Jal.

Tacos de Barbacoa Omar Carlos
If you want good barbacoa tacos (slow-cooked beef) in the morning, look no further. Omar Carlos is one of the best-known names for barbacoa in Guadalajara, and its locations are a must after a night out. But this barbacoa is not just a hangover cure. The tacos come dorados (crispy), medios (half-crispy) or blandos (soft), and they are for anyone who wants to start the day with this Jalisco classic. Our advice: do not worry about what people think and dunk your crispy tacos in the rich consomé (broth). Omar Carlos has spacious dining rooms at all its locations.
Address: Av. Patria 4970-A, Colli Urbano, 45070 Zapopan, Jal.
Tacos Moy

These are excellent steamed tacos, perfect to start the day or for a mid-morning snack. They are served on a double tortilla, and the fillings include carnaza, barbacoa, crispy chicharrón, beans, panela cheese a la diabla, mushrooms, rajas (poblano pepper strips) with cheese, stewed chicharrón, chicken with panela, pastor in red wine, shrimp a la diabla, shrimp with mole and shrimp with cheese. There is also a “special of the day” every day. All the salsas are very good, but our favorite is the peanut salsa. Be careful, though: it is hot! Tacos Moy has a single location with seating.

Tacos Juan

One of the locals’ favorite breakfast spots and, for many, the best barbacoa tacos in Guadalajara. You can order them soft or crisped in the barbacoa’s own fat, which brings out even more flavor. Greasy but tasty, as the saying goes. Just add a little salsa and a squeeze of lime, and you will see why this is a favorite among Guadalajara’s taco experts.
Tacos Juan has several locations in the city with seating. Here are the details of its original location.
Address: Calle José Clemente Orozco 465, Santa Teresita, 44600 Guadalajara, Jal.

El Palomar de Santa Rita
A little-known find: a Sinaloa-style taquería serving tacos de asada (grilled steak), arrachera (skirt steak), cabrería (rib-eye cut), picaña (picanha) and chorizo. Everything here is excellent. The fresh tortillas are soft and delicious, and the meat is high quality, tender and juicy. There is also a small salsa bar with several salsas, nopales (cactus paddles) and grilled green onions to take your taco to the next level.
The star dish is the “chorreada,” and it is delicious: a corn sope (thick masa base) topped with asientos de carnitas, melted cheese and your choice of meat. If you are not from Sinaloa and do not know what asientos are, they are the bits left at the bottom of the pot when carnitas are cooked. Not the healthiest thing, but the tastiest. If you are eating “light,” you can order your chorreada without asientos and still get about 70% of the experience.
Ask them to make your chorreada to order so the sope dough is softer. El Palomar does not have a storefront; it is a food cart on the street, but there are a few tables, and they put up an awning during the rainy season.
Address: San Agustín 636, Jardín de San Ignacio, 45040 Zapopan, Jal.

Asaditos Los Compitas

They serve chorizo, asada, rib and arrachera tacos, all very good. Besides tacos, there are quesadillas, vampiros (crispy tortillas topped with cheese and meat), gringas (flour tortillas with cheese and al pastor) and takiquesos. Our favorite is the kekota, which, as the name hints, is an oversized quesadilla for big appetites only. If you want to go easy on the tortillas, you can order the meat by the plate and build your own tacos. Asaditos Los Compitas also has a couple of items you will not find in many places. One is the chile güero (yellow pepper), served on two tortillas with cheese and your choice of meat. The other is the nopal, the same idea but with a grilled cactus paddle instead of the pepper.
Address: Av. Niño Obrero 656, Jardín de San Ignacio, 45040 Zapopan, Jal.

Tomate

In a relatively short time, this taquería has become a local favorite and the go-to place for showing foreign visitors what a great taco tastes like. You can order by the taco or by the plate in 300 g or 500 g portions (about 10.5 oz or 17.5 oz), choosing from pastor, steak, chorizo, arrachera or mixed. It is a pleasant spot with a large dining room in Chapultepec, one of the city’s trendiest areas, surrounded by other restaurants and bars.
Address: Av. Chapultepec Sur 361, Col Americana, Americana, 45681 Guadalajara, Jal.

Tacos La Choza

You could call these “fancy tacos,” not because they come on china plates or because the stand is elegant, but because the quality of the meat, salsas and tortillas would satisfy any gourmet. They serve rib-eye, arrachera, sirloin, vacío (flank), picaña, Argentine chorizo, chistorra and venison chorizo. See why we call them fancy? And those are just the regular ones. Among their more unusual options are duck, BBQ duck, rabbit, shrimp, octopus, marlin, tuna, wild boar and surf and turf, a mix of arrachera and shrimp. Still nothing you like? Maybe you prefer something vegetarian. How about a hibiscus flower taco, or one with caprese salad?
To finish, there is nothing better than dessert, and La Choza is one of the few taco stands that also serves desserts made to order, no packaged pies here. There are so many options that one visit is not enough to try everything, so start soon.
Address: Calle Miguel de Cervantes Saavedra 81, Col Americana, La Obrera, 44160 Guadalajara, Jal.
Tripitas Tacos GDL

A true taco lover does not stop at al pastor. For them there are tacos de tripita (beef tripe), and Guadalajara has a place that specializes in them. For those who are not convinced, they also have steak and chorizo. Back to the tripe tacos: they are excellent, and you can order them soft or crispy. There is also caldillo de chinchulines (small intestine broth) and bone marrow with tripe. If you love tripe, you have to try it all!
Tripitas Tacos GDL has two locations, both with seating.
Address: Av San Jacinto 997, Jardines de la Paz, 44860 Guadalajara, Jal.
